Ruby Bhogal served up a tasty chilli paneer with rice on Steph’s Packed Lunch.
The ingredients are: 30g plain flour, 25g cornflour, ½ tsp sea salt, 1/8 tsp ground black pepper, ½ tsp ginger, grated and finely chopped, 1 large clove garlic, grated and finely chopped, 50ml water, 1tsp soy sauce, ½ tsp Sriracha, 250g Paneer, cut into 1cm cubes and Vegetable oil for frying.
For the sauce: glug of vegetable oil, 2 large cloves garlic, grated and finely chopped, ½ tsp ginger, grated and finely chopped, 1 red onion, peeled and roughly chopped, 1 green bell pepper, sliced, 1 green finger chilli, finely chopped, 4 spring onions, sliced, 2 ½ tsp Sriracha, 2 ½ tbsp soy sauce, 2tbsp tomato ketchup, 1 ½ tbsp apple cider vinegar, Good pinch of salt and pepper, Pinch of caster sugar, 1tsp cornflour, 2tbsp water and Coriander to garnish, roughly chopped.
To serve: Cooked rice or noodles.
