John Whaite served up a tasty chicken lattice pie on Steph’s Packed Lunch.
The ingredients for the pastry: 500g packet of shop bought short crust pastry.
For the filling: 600g chicken thigh fillets, skinless, boneless and diced,1tbsp plain flour, Generous pinch of salt, 2tbsp vegetable oil, 50ml vodka or white wine, to deglaze pan, 2 medium leeks, roughly chopped, 1 medium onion, peeled and roughly chopped, 2 carrots, peeled and diced, 500ml chicken stock, 1tbsp flour, 100g full fat creme fraiche, 100g frozen peas, 1 medium free range egg yolk, Drop of water and Pinch of salt.
