Freddy Forster smoked haddock and prawn risotto recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty smoked haddock and prawn risotto on Steph’s Packed Lunch.

The ingredients are: 250g Arborio risotto rice, ¼ clove garlic, peeled and finely chopped, 1 small onion, peeled and finely chopped, 50g unsalted butter, Pinch of turmeric (or saffron, if desired), Salt/pepper, 150ml white wine and 500ml vegetable stock.

For the garnish: 50g parmesan cheese, finely grated, 50ml double cream, 2tbsp spring onions, finely chopped, ½ tbsp coriander, roughly chopped, 1tbsp chives, chopped, 25g unsalted butter, 2tbsp mascarpone cheese, 100g flaked smoked haddock, pre poached in milk, 12 in number small prawns, pre-cooked, Zest of 1 lemon and 1-2tbsp olive oil.
