Romy Gill served up a tasty chicken korma curry on Steph’s Packed Lunch.
The ingredients for the chicken and marinade are: 500g boneless chicken, diced, 1tsp ginger, peeled and finely grated, 1tsp garlic, peeled and finely grated, 1tsp ground coriander, 50g plain yogurt, ½ tsp salt and Juice of half a lime.
For sauce: 4tsp Ghee or 6tsp rapeseed oil, 2tsp ginger, peeled and finely grated, 4 large cloves garlic, peeled and grated, 1 medium white onion, peeled and chopped, 1 tin of tomatoes, 1tsp turmeric, 1tsp cumin seeds, 1-2 tsp mild chilli powder, ½ tsp salt, 100g ground almonds and 400ml full fat milk or almond milk.
