Dominique’s Singapore-style tofu with spicy chilli sauce on The Great Cookbook Challenge

Dominique served up tasty Singapore-style tofu with spicy chilli sauce on The Great Cookbook Challenge with Jamie Oliver.

The ingredients are: 80g cashew nuts, 400g firm tofu, cut into cubes, 250g tenderstem broccoli, 4 medium tomatoes, diced, 2 eggs, lightly beaten, 400ml hot vegetable stock or boiling water, oil for frying, fresh coriander, chopped, 2 onions, ,finely chopped, 1 thumb of ginger, grated (appox. 1 tbsp), 4 cloves of garlic, crushed, 2 red chillies, finely chopped(remove seeds if you prefer for a milder heat), 8 tbsp tomato ketchup, 4 tbsp sweet chilli sauce, 2 tsp sesame oil and 2 tbsp soy sauce.
