Rex’s pork adobo with mango chilli salsa, pak choi, broccoli and steamed jasmine rice on The Great Cookbook Challenge

Rex served up pork adobo (Filipino pork stew) with mango chilli salsa, pak choi, broccoli and steamed jasmine rice on The Great Cookbook Challenge with Jamie Oliver.

The ingredients are: 900g pork belly(prime cut), 120ml vegetable oil, 50ml sherry vinegar, 1 tsp light brown sugar, 30ml light soy sauce, 1 garlic bulb, 1/2 large Spanish onion, 5 black peppercorns, 2 bay leaves, 100ml water(optional), 40g spring onions, freshly ground black pepper and sea salt to taste.

For the chilli salsa; 1 mango(ripe but firm), 1 chilli, 5g coriander, 1 red medium tomato, 2 cloves garlic and 1/2 a lime juice.

For the Steamed Jasmine rice: 16g Jasmine rice and 160g water.
