Paul Foster served up tasty Beef Stroganoff Crispy Straw Potatoes and Gherkins on James Martin’s Saturday Morning.
The ingredients are: 300g beef tail fillet, 25g butter, 1 banana shallot, peeled and sliced, 1 clove garlic, peeled and crushed, 100g button chestnut mushrooms, 1 tsp Dijon mustard, 1 tsp sweet smoked paprika, 120g beef stock, 100g sour cream, 50g double cream and 40g good quality brandy.
To finish: 100g cornichons and 10g shredded parsley.
For the straw potatoes: 1 larger Maris Piper potato and 500g sunflower oil.
