Dominique served up tamarind, honey and sesame chicken with peanut seroendeng, cucumber pickle and garlicky green beans on The Great Cookbook Challenge with Jamie Oliver.
The ingredients for the tamarind chicken are: 10 tbsp tamarind sauce, 8 tbsp honey, 2 tbsp sesame oil, 3 tbsp fish sauce, 2 tbsp soy sauce, 4 cloves garlic, crushed, 1/2 tsp salt, 8 chicken thighs, trimmed – skin on, bone left in, 4 spring onions, cut into large pieces and sea salt flakes.
For the peanut seroendeng: 1 garlic clove, crushed, 80g desiccated coconut, 1 1/2 tbsp soft brown sugar, 50g peanuts, roughly chopped, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/4 tsp turmeric, 1/2 tsp fine salt, 2 tsp chilli flakes and oil for frying.
For the cucumber pickle: 4 tbsp rice wine vinegar or white wine vinegar, 1-2 tbsp sugar, according to taste, pinch of salt and half a cucumber.
For the beans: 250g fine green beans and 4 garlic cloves, chopped.
To serve: jasmine rice and finely sliced spring onions.
