Simon Rimmer served up a tasty Butter Poached Chicken with Crispy Chicken Skin on Sunday Brunch.
The ingredients are: 2 x chicken breasts, skin on, 200g butter, Peel of a lemon and Sea salt.
For the salad: 100g toasted pecans, Handful rocket, 75g edamame beans, Half head fennel, finely sliced and Half finely diced cucumber.
For the dressing: Juice and zest of 1 lemon, 1 Tbs sugar, 1 Tsp salt and 150ml extra virgin olive oil.
