Simon Rimmer served up a tasty Yorkshire Pudding with beans and sausage on Steph’s Packed Lunch.
The ingredients for the Yorkshire pudding are: 1 large cup/120g plain flour, 1tsp salt, 1 large cup/120ml eggs beaten, ½ large cup/60ml milk, ½ large cup/60ml water, 1tbsp malt vinegar and 120g beef dripping, for cooking.
For the beans and sausage: 2tbsp olive oil, 1 onion, peeled and diced, 2 stalks celery, finely chopped, 2 cloves garlic peeled and diced, 1tbsp ground cumin, 1tbsp smoked paprika, 1tbsp tomato puree, 1 ancho chilli, soaked in water for 20 minutes, 30ml cider vinegar, 50g soft light brown sugar, 1 tin cannellini beans, washed and drained, 1 tin butter beans, washed and drained, 800ml beef stock and 8 cooked good quality pork sausages, cut into 30mm pieces.
To serve: Brown sauce, Hot sauce and Cheddar cheese, grated.
