Simon Rimmer served up tasty White Bean Hummus with Roasted Golden Beets and Walnuts on Sunday Brunch.
The ingredients are: 1 Tin cannellini beans, drained and washed, 25g tahini, 2 lemons- zest and juiced, 3 cloves garlic, 100-125ml extra virgin olive oil, 4 golden beets, cut into big wedges, 50ml olive oil, Tbsp zaatar and Tsp chilli flakes.
For the garnish: Tbsp zaatar and 100g of walnuts.
Serve with flat breads.
