Michel Roux poached cod with orange, vermouth and fresh on Michel Roux’s French Country Cooking

Michel Roux Jr. served up a tasty poached white fish (Michel used cod) with, orange, vermouth and fresh herbs on Michel Roux’s French Country Cooking.

The ingredients include: Salt, black pepper, orange zest, shallot, white Vermont wine, orange segments and juice, fresh basil, fennel, parsley, chives and creme fraiche.

To serve french beans and potatoes.
