Simon Rimmer served up a festive spicy turkey crown with miso and Madeira on Sunday Brunch.
The ingredients are: 2kg (approx.) turkey crown, 100g softened seasoned butter, 1kg small potatoes, 1 red onion, cut into wedges, 4 cloves sliced garlic, 50mm piece ginger, cut into matchsticks, 30g fresh rosemary, 30g sage, 800ml chicken stock, 75ml light soy sauce, 50ml Worcestershire sauce, 1 Tsp chilli flakes, Zest 1 lime, 1 Tbs white miso paste, 75ml madeira and 125g kale.
