James Martin served up tasty slow cooked roast pork with Vichy carrots, mash potatoes and a cider and calvados sauce on James Martin’s Saturday Morning.
The ingredients for the pork are: 2kg rolled middle white pork loin, 1 tbs sea salt and 2 large pork chops.
For the sauce: 400ml veal jus, 50ml cider, 25ml calvados, 100ml double cream, 25g butter, 1 tbsp grain mustard, Salt and pepper.
For the mash: 1kg mash, 100g butter and 100ml double cream.
For the carrots: 12 large carrots peeled, 8 star anise, 100g butter, 100g caster sugar and Water to cover.
