Ainsley Harriott served up delicious Caribbean cinnamon banana fritters with a chocolate dipping sauce using his mum’s recipe on Ainsley’s Good Mood Food.
The ingredients for the fritters: 4 large, very ripe bananas, 100g plain flour, 50g wholemeal flour, 2 tsp baking powder, 1 heaped tbsp desiccated coconut, 3 tbsp brown sugar, ¼ tsp salt, ½ tsp ground nutmeg, ½ tsp ground cinnamon and ½ tsp vanilla extract oil, for deep-frying.
For the Chocolate Sauce: 75g dark chocolate, chopped, 10g butter or plant-based butter, 125ml double cream or plant-based cream, a pinch of ground cinnamon and ½ tbsp golden syrup.
To Coat: 4 tbsp caster sugar and 2 tsp ground cinnamon.
