Bikers fudgy walnut cake with butter and fudge icing recipe on Best of British foods

Si and Dave make a delicious looking fudgy walnut cake on their Best of British foods discovery show. They visit the famous Ludlow food market festival for their ingredients.

The Bikers says: “Any fairly crumbly, old-fashioned fudge is good for this cake but if you have the choice, salted fudge works particularly well.”

The ingredients for the cake are: 75g walnuts, 225g butter, softened, plus extra for greasing, 225g light brown muscovado sugar, 4 large free-range eggs, 225g self-raising flour, 1 tsp baking powder.
For the icing

150g butter, softened, 150g icing sugar, 250g fudge, roughly chopped and 25g walnut halves.
