James Martin served up a delicious American New York City (NYC) Baked Raspberry Cheesecake with sour cream and a rice cracker biscuit base in this week’s masterclass on James Martin’s Saturday Morning.
The ingredients for the base are: 160g digestive biscuits or rice crackers, blitzed, 85g butter, melted – plus extra to grease the tin and 1 tbsp caster sugar.
For the topping: 1tsp vanilla bean paste, grated zest and juice of 1 lemon, 200g caster sugar, 50g corn flour, 850g full-fat soft cream cheese, 4 large eggs, 175ml sour cream, 400g raspberries and Icing sugar to dust.
