Ainsley Harriott served up a delicious blueberry and almond clafoutis with cardamom cream on Ainsley’s Good Mood Food.
The ingredients are: a small knob of butter, for greasing, 100g caster sugar, plus extra for sprinkling, 250g fresh blueberries, zest of 1 lemon, 125ml whole milk, 150ml double cream, ½ tsp almond extract or 1 tsp vanilla extract, 3 large eggs, 30g plain flour, 40g ground almonds, 1 tsp baking powder and a pinch of salt.
For the Cardamom Cream: 250g double cream, 1 tbsp icing sugar, plus extra for dusting and seeds of 4-5 cardamon pods, crushed.
