Simon Rimmer served up tasty Poached Chicken With Peaches And Herbs on Sunday Brunch.
The ingredients are: 100g of butter, 125ml of white wine, 1 sliced shallot, 2 cloves of garlic, 1 tbsp smoked paprika, salt & pepper, 1 tbsp of mixed, dried Italian herbs and 4 chicken breasts.
For the peaches: 4 peaches, 50g honey and a twist of black pepper.
For the dressing: 1 tbsp grain mustard, 1 tbsp honey, 45 ml cider vinegar, 125ml olive oil, salt and pepper.
To finish: 2 handfuls of rocket, 1 tbsp chopped smoked almonds and 1 finely sliced shallots.
Serve with Greek yoghurt.
