Rochelle Humes served up a tasty Thai green curry with aubergine and chicken thighs on This Morning.

The ingredients are: 1 tbsp vegetable oil, 500g skinless, boneless chicken thighs, cut into bite-sized pieces, 1 aubergine, cut into 2 cm pieces, 1 yellow pepper, deseeded and finely sliced, 2 tbsp good-quality Thai green curry paste (check label for allergens), 1 x 400 ml can light coconut milk and 200g green beans, trimmed and halved (frozen veg of your choice also works).

To serve: Cooked jasmine rice, lime wedges, sliced chilli and coriander (optional).
