Matt Tebbutt served up a tasty sirloin steak with garlic roast potatoes and cavolo nero and pine nut dressing on Saturday Kitchen.
The ingredients for the sirloin steak: 1 tbsp olive oil, 1 sirloin steak on the bone (about 500g), 1 garlic bulb, skin-on and smashed, 30g salted butter, 6 sage leaves and salt and freshly ground black pepper.
For the garlic-roasted potatoes: 8 small Jersey Royal potatoes or new potatoes, scrubbed, 2 tbsp olive oil and 3 garlic cloves.
For the cavolo nero dressing: 400g cavolo nero, stalks removed, 50g pine nuts, 100g Parmesan, grated, 1–2 tsp Dijon mustard, 50–100ml olive oil, pinch ground nutmeg and 100–200ml chicken stock.
