Freddy Forster Salmon Fish Cake with Poached Egg and Baby Spinach Salad recipe on Steph’s Packed Lunch

Freddy Forster served up tasty Salmon Fish Cake with Poached Egg and Baby Spinach Salad on Steph’s Packed Lunch.

The ingredients for the fish cake are: 2 salmon fillets, 2 large potatoes, 1/2 tsp Dijon mustard, 1 lemon, Salt/pepper, 1 egg yolk, Flour, 10ml milk, 3 slices of bread made into breadcrumbs and Vegetable oil.

For the Poached Egg: 2 eggs, water, Salt and white wine vinegar.

For the Spinach and Chilli Dressing: Small handful of spinach (15g), 2 ml olive oil, salt/pepper, 1/2 tsp finely chopped red chilli, Pinch of chilli flakes, 1 tbsp soya sauce, Juice and zest of half a lemon, 2 tbsp water and 1 tbsp chopped tin tomatoes.
