Tom Kerridge served up tasty grilled beef suya(Nigerian spice mix) skewers with a cabbage salad on James Martin’s Saturday Morning.
The ingredients for the beef: 500g sirloin steak, 2 large garlic cloves, grated, 5cm piece of fresh ginger, grated, 1 tbsp liquid seasoning, 4 tbsp vegetable oil, 2 red peppers and 2 green peppers.
The suya spice mix: 80g roasted peanuts, finely chopped, 1 tbsp paprika, 1 tbsp mild chilli powder (optional), 1 tbsp garlic salt, 1 tbsp onion powder, 1 tsp ground ginger, ½ tsp ground cinnamon, ½ tsp cracked black pepper, ½ tsp salt and ¼ tsp ground allspice.
For the cabbage salad: 350g white cabbage, shredded, 1 red onion, finely sliced, 4 spring onions, finely sliced, A large handful of parsley, chopped, 3 tbsp extra virgin olive oil, Juice of 1 lime, Salt and freshly ground black pepper.
To serve: Lime wedges.
