Lisa Faulkner and John Torode served up a tasty Spanish style stew with aioli on John and Lisa’s Weekend Kitchen.
The ingredients for the aioli are: 3 garlic cloves, grated, 1 tsp saffron, activated in a splash of water and vinegar, 2 eggs, boiled, 1 tsp mustard , 300ml olive oil, Salt and pepper and 1tbsp lemon juice.
For the stew: Splash of olive oil , 1 large onion, finely sliced, 1 large fennel bulb, finely sliced, 2 cloves garlic, grated, 150 g cooking chorizo, chopped, 1 tsp chilli flakes, 1 tsp smoked sweet paprika , 150ml white wine , A pinch of saffron, 250ml hot stock, 1 tin chopped tomatoes, 150g raw king prawns, 100g of small frozen scallops, defrosted, 250g monkfish fillets, roughly chopped , Fresh parsley, finely chopped and Fresh dill, finely chopped.
To serve: Lemon wedges and Crusty bread.
