James Martin roasted sea bass with hollandaise sauce and asparagus recipe on James Martin’s Saturday Morning

James Martin served up tasty roasted sea bass fillets with hollandaise sauce and asparagus on James Martin’s Saturday Morning.

The ingredients are: 4 x 200g sea bass portions, Salt and pepper, 25g butter, 1 large bunch of asparagus and 25ml olive oil.

for the hollandaise sauce: 3 large egg yolks and 300g clarified butter.

For the gastric: 4 tbs white wine vinegar, 6 white peppercorns, 1 shallot, peeled and diced and 1 bay leaf.

To serve: 1 tbs mixed orange, lime and lemon zest and 1 tsp chives chopped.
