Clodagh Mckenna Margarita risotto recipe on This Morning

Clodagh Mckenna served up a tasty Margarita risotto on This Morning.

The ingredients are: 50g butter, 2 shallots, very finely chopped, 2 cloves garlic, crushed, 300g carnaroli rice, 1 can of tinned cherry tomatoes, 100ml dry white wine, 500ml hot vegetable or chicken stock, 2 fresh buffalo mozzarella, torn into bite-sized pieces, 10 large basil leaves, torn, 150g grated Parmesan cheese, sea salt and freshly ground and black pepper.
