Margret’s eccles cake recipe on Ainsley’s Food We Love

Ainsley Harriott served up Margret’s eccles cake with cheese for Jessica Plummer on Ainsley’s Food We Love.

The ingredients are: 500g block of ready-made puff pastry, 1 egg white, lightly whisked, 2tbsp demerara sugar, 30g butter, melted, 3tbsp light muscovado or brown sugar, 100g currants, 25g mixed peel, 1 tsp ground allspice, 1/2 tsp ground allspice, 1/2 tsp ground cinnamon and zest of 1 lemon.
