James Martin served up a delicious Easter Simnel Cake with Brandy and Marzipan on James Martin’s Saturday Morning.
The ingredients are: 175g butter, 175g dark brown sugar, 3 eggs, 50ml milk, 175g self raising flour, 2 tsp mixed spice, 1 tsp ground ginger, 100g glace cherries chopped, 400g mixed fruit or sultanas and 50ml brandy.
For the marzipan: 175g caster sugar, 300g icing sugar, 450g ground almonds, 2 eggs and Squeeze of lemon.
