Simon Rimmer severed up Aubergine Mash With Crispy Rice Paper on today’s episode of Sunday Brunch.
The ingredients are: 2 aubergines, a little oil, 8 cloves of sliced garlic, 4 birds eye chillies, a pinch of salt, 4 chopped spring onions, a bunch of chopped fresh coriander and mint and 6 rice paper circles.
To Serve: nigella seeds, sesame seeds and a squeeze of lime.
