Mary berry serves up a snack for any time of the day for her weekday supper theme on this week’s episode of Mary Berry Cooks. The queen of baking makes rosemary-roasted almonds and says:
“This is a great snack to bring out when the drinks are flowing. The combination of rosemary and smoked paprika makes these nuts especially more-ish.”
The ingredients for her almonds snack are: 200g blanched almonds, 2 tbsp olive oil, 2 tsp sea salt, 2 tbsp finely chopped rosemary needles, ½ tsp smoked paprika.
To prepare rosemary-roasted almonds: Add the almonds to a wide-based pan, heat over a very high heat and fry for a minute. Add the oil, salt and rosemary then fry until crisp.
Remove from the heat and sprinkle in the paprika, toss together and serve. If preferred, roast in an oven preheated to 220C.
