The ingredients are: 150g plain flour, plus extra for dusting, 1 tbsp caster sugar, pinch bicarbonate of soda, 30g butter, 1 free-range egg, separated, 50ml Marsala wine, vegetable oil, for deep frying and 100g dark chocolate, broken into small pieces.

For the filling: 250g ricotta, 100g mascarpone, 1 orange, finely grated zest only, 2 tbsp icing sugar, plus extra for dusting and pinch ground cinnamon.
