Ainsley Harriott served up a tasty Thai-style turkey and coconut broth with chillies and scones for Christmas on Ainsley’s Festive Food We Love.
The ingredients are: 2 inch fresh ginger, julienned (or galangal root, sliced into 1/8 thick discs), 500ml chicken broth, 2 shallots, thinly sliced, 325g shredded cooked turkey or chicken, 150g button or oyster mushrooms, sliced, 3-4 tbsp fish sauce, 1-2 sillies(green or red), thinly sliced, plus extra to serve, 1&1/2 tsp salt, 2 tsp palm or brown sugar, 400ml can of coconut milk, juice of 1-2 limes, to taste and a handful of coriander leaves, to serve.
