James Martin Charlotte Royale with Swiss rolls and blackberry mousse recipe on James Martin’s Saturday Morning

James Martin served up a delicious classic Charlotte Royale with Swiss rolls, blackberry mousse and blackcurrant jelly on James Martin’s Saturday Morning.

The ingredients are; 1 tsp veg oil, Clingfilm to line the bowl and 3 Swiss rolls sliced to 5 mm thick.

For the mousse: 6 egg whites, whisked to peaks, 300ml blackberry sauce, 600ml double cream whipped, 16 leaves gelatine, 500ml custard, 200g blackberries and 400ml blackcurrant jelly.

To serve: Blackberries and Holly sprigs.
