Mary Berry cooks a fish pie recipe that she has been making for over 40 years with three types of fish.
Mary says about her three fish pie with leek and wine sauce : “A lovely fish pie is always a great dish to make ahead and serve for a big family gathering or even a casual supper party with friends. The white wine and leeks make this pie taste a little more sophisticated than usual, but you can use all milk if you are feeding children.”
For the fish pie filling, Mary used:
75g butter,2 leeks, sliced ,75g plain flour, 150ml white wine, 568ml milk, 2 tbsp chopped parsley, 750g mixture of salmon, smoked haddock and fresh haddock, 6 free-range eggs, hard-boiled, peeled and quartered.
For the potato topping:
1kg peeled main crop potatoes, knob of butter, a little milk, salt and pepper and 50g Gruyère cheese, grated.
