Asma Khan spiced aubergines (dahi baingan) with garlic raita recipe on Saturday Kitchen

Asma Khan served up tasty spiced aubergines(dahi baingan) with garlic raita and parathas on Saturday Kitchen.

The ingredients for the spiced aubergines are: 1 tsp ground turmeric, ½ tsp chilli powder, 1 tsp salt, 4 medium aubergines, thinly sliced into discs and oil, for frying.

For the garlic raita: 500g full-fat Turkish or Greek yoghurt, 6 garlic cloves, crushed, ½ tsp chilli powder, 1 tsp salt, ½ tsp brown sugar, For the tempering, 10 fresh curry leaves and 3 dried red chillies, broken in half.

To serve: parathas.
