Tonia Buxton Turmeric Spiced Soup with Courgette and Feta Muffins recipe on Sunday Brunch

Tonia Buxton served up a tasty Turmeric Spiced Soup with Courgette and Feta Muffins on Sunday Brunch.

The ingredients are: 1 tbsp turmeric, 1 tsp coarsely ground black pepper, 2 tsp cumin seeds, 1 tsp cinnamon, sea salt, olive oil(good glug), 2 tbsp butter, 250g shitake mushrooms, 1 butternut squash( or any other seasonal root vegetable) skin on, deesed and cut into cubes, 2 carrots scrubbed and chopped, 2 onions roughly chopped, 4 cloves garlic halved, 1 or 2 chillies (deseeded if you don’t want it too hot) and 850ml vegetable stock.

For the topping: Greek yoghurt, coriander/parsley/chives and pumpkin seeds.
