Simon Rimmer Greek Style Shepherds Pie recipe on Sunday Brunch

Simon Rimmer served up a tasty Greek Style Shepherds Pie on Sunday Brunch.

The ingredients are: 50g large chunks of lamb shoulder, 1 finely chopped onion, 1 garlic clove, 1 stick celery and 1 carrot, both finely chopped,1 diced aubergine, 400g tin chopped tomatoes, 300ml lamb stock, 200g tomato puree, salt & pepper, 1 cinnamon stick, 1 tbsp dried oregano, a sprig of fresh rosemary, chopped, 1 tbsp red wine vinegar and 2 bay leaves.

For the mash: 150g butter, 750g-1kg mashed potatoes and 100g crumbled feta cheese.
