Simon Rimmer served up a delicious apple and blueberry cake with maple syrup on Sunday Brunch.
The ingredients are: 150g melted butter, 175g soft dark brown sugar, 2 eggs, 2 tsp vanilla paste, 200g peeled grated apple, 50g lightly crushed blueberries, 50g lightly chopped pecans, 225g self raising flour, 2 tsp baking powder and 2 tsp ground cinnamon.
To finish: 50g butter, 150ml pure maple syrup and 30g chopped pecans.
Serve with crème fraiche.
