Freddy Forster served up a tasty west African stew with plantains on Steph’s Packed Lunch.
The ingredients are: 1 large onion, 1 clove of garlic, 1 scotch bonnet chilli pepper, 3 plum tomatoes, diced, ½ teaspoon of tomato puree, 350ml coconut milk , 3 tablespoons peanut butter (Smooth), 16 pieces of raw shelled prawns, 350g fresh salmon (Whole piece, no bone and skin off) or 1 fillet of red snapper or bream, 6 pieces of okra (Ladies fingers), 150g baby spinach, Side dish and 1 large plantain.
