Simon Rimmer served up tasty cauliflower cheese and toast with dressed rocket and watercress on Sunday Brunch.
The ingredients are: 1 head of cauliflower, broken into florets (not tiny), olive oil, salt & pepper, 2 clove of garlic, 1 finely diced onion, 1tsp chilli flakes, 1tbs smoked paprika, 1tsp cumin, 500g chopped very ripe tomatoes, 50ml sherry vinegar and 50g sugar, 4 x thick cut slices white bloomer, 150g butter, chutney, 150g grated mozzarella, 150g grated Gruyere, 50g grated Parmesan, 50g mascarpone, 30g grain mustard and 1 egg.
To Serve: dressed rocket and watercress.
