Simon Rimmer Apple and Peach Cobbler recipe on Sunday Brunch

Simon Rimmer served up a delicious apple and peach cobbler with custard on Sunday Brunch.

The ingredients are: 150g eating apples, chopped and peeled, 1 vanilla pod (scraped out), 175g sugar, 1 cinnamon stick, 450g of chopped and destoned peaches and 100g flaked toasted almonds.

For the topping: 225g of flour, 3 tsp baking powder, a pinch of salt, 25g of demerara sugar, 100g butter and 175ml of buttermilk.
