Lisa Faulkner and John Torode cowboy beans with loaded potato skins recipe on John and Lisa’s Weekend Kitchen

John Torode and Lisa Faulkner served up tasty cowboy beans with loaded potato skins on John and Lisa’s Weekend Kitchen.

The ingredients for the loaded potato skins: A little olive oil, Chorizo, chopped, 4 spring onions, chopped, 4 jacket potatoes, baked, 8 small knobs of butter, 100g cheddar cheese, grated, Salt and pepper.

For the cowboy beans: 2 tbsp olive oil, 1 red onion, finely sliced, 2 cloves garlic, 1 tin chopped tomatoes, 1 jar tomato salsa, 1 tsp smoked sweet paprika, 300ml water, 1 x 400g tin kidney beans, drained and rinsed, 1 x 400g cannellini beans, drained and rinsed, 2 avocados, Worcestershire sauce, Spring onions, 1 tsp paprika, 2 tbsp natural yogurt, Salt and Pepper.
