Phil Vickery served up a delicious lavender upside-down cake with apricots for a lavender summer treat on This Morning.

The ingredients are: 2 x 400g tins apricots, drained really well, 200g castor sugar, 6-8 heads fresh lavender, 175g castor sugar, 175g unsalted butter, soft, 3 medium eggs, room temperature, 175g self-raising flour and crème fraiche or ice cream, to serve.
