Ruby’s chocolate and beetroot cake recipe on This Morning

Ruby Bhogal for The Great British Bake Off, served up a delicious and almost healthy chocolate and beetroot cake with almond flour and raspberry chia jam on This Morning.

The ingredients are: Olive oil (for greasing tins), 200g dark chocolate (over 70% cocoa solids), 250g cooked beetroot, 30g plain flour, (plus extra for dusting tins), 100g ground almonds, 150g Golden Caster Sugar, 1 tsp vanilla bean paste/extract, 1 ½ tsp baking powder, 1 tbsp cocoa powder and 4 large free-range eggs.

For the raspberry chia jam: 250g frozen raspberries (fresh also works), 1.5tbsp water and 20g chia seeds.

For the chocolate ganache: 100g good quality dark chocolate, ¾ tbsp olive oil and Freeze-dried/ fresh raspberries to decorate.
