Tom Kerridge served up a tasty beetroot farro salad with a Dijon mustard dressing on Lose Weight and Get Fit.
The ingredients are: 100g quick-cook farro, 100g frozen edamame beans, 50g kale, tough stalks removed and roughly chopped, 300g cooked beetroot, cut into wedges, 2 spring onions, trimmed and thinly sliced, 30g feta, 15g shelled pistachios or toasted walnuts, sea salt and freshly ground black pepper.
For the dressing: 1 tbsp Dijon mustard, 2 lemons, juice only, 2 tbsp extra virgin olive oil, sea salt and freshly ground black pepper.
