Gino served up delicious poached pears in red wine and vanilla on Gino’s Italian Express.
The ingredients are: 6 large pears, 750ml bottle of full-bodied red wine, 2 teaspoons vanilla extract, 1 vanilla pod, plus extra for decoration (optional), 250g caster sugar and 1 cinnamon stick, broken in half.
