Merrilees Parker served up tasty canapes with potatoes, whipped feta, beetroot and mackerel pate for the New Year on Beautiful Baking with Juliet Sear.
The ingredients are: 12 x baby potatoes (between 35g-40g each), halved lengthways, light olive oil, Maldon sea salt and cracked black pepper.
For the pate: 175g smoked mackerel, de-skinned, boned & blood line removed, 100g soft full fat cream cheese, 1 tbsp lemon juice, 2 tsp fresh grated horseradish (good quality from a jar is fine)
1 tbsp chopped fresh dill,
1 tbsp chopped fresh parsley, 1 tbsp very finely chopped chives.
To serve: a few dill fronds, a few chopped chives, Maldon sea salt and freshly ground pepper.
