Lisa Faulkner Christmas Cake with brandy and margarine recipe on John and Lisa’s Weekend Kitchen

Lisa Faulkner served up a delicious Christmas Cake with brandy, margarine and marzipan for the festive season using her mother’s recipe on John and Lisa’s Weekend Kitchen.

The ingredients are: 1kg mixed dried fruit, 100g glace cherries, halved, 50g ground almonds, 100g raisins or currants, 300g plain flour, 1 level tsp grated nutmeg, ½ level tsp mixed spice, ½ level tsp ground cinnamon, 300g soft baking margarine, 300g caster sugar, Finely grated rind of 1 lemon, 6 eggs and 1-2 tbsp brandy.

To decorate: Icing sugar to dust, 675g marzipan, 6 tbsp apricot jam, warmed and sieved and 600g ready prepared royal icing.
