Juliet Sear served up a tasty spiced pumpkin pie with a meringue topping on Beautiful Baking with Juliet Sear.

The ingredients for the base: 275g plain flour, plus extra for rolling, 190g cold butter, diced, 60g light muscovado sugar, 1tsp ground cinnamon, 1 large egg, yolk and white separated.

For the filling: 2 large eggs, 125g golden caster sugar, 1 tsp vanilla bean paste, 1 tsp cinnamon, 1/2 tsp mixed spice, 1/2 tsp ground ginger, 1 large pinch of ground nutmeg, 275g tinned pumpkin puree and 200ml evaporated milk.

For the Swiss meringue topping: 100g golden caster sugar and 2 fresh large free-range egg whites.

To serve: vanilla ice-cream, whipped double cream or crème fraiche.
