Simon Rimmer Beetroot and Feta Cakes recipe on Sunday Brunch

Simon Rimmer served up tasty Beetroot and Feta Cakes on Sunday Brunch.

The ingredients are: 200g mashed potatoes (no butter or anything added), 200g grated raw beetroot, 150g feta, 50g chopped mint, 100g flour, 3 beaten eggs and 200g brioche breadcrumbs.

For the sauce: 250g sour cream, 100g yoghurt, tsp chilli flakes, 1 grated cucumber, lots of chopped mint, juice and zest 1 lime.
